5 Recipes for Cold Weather

1) Chili
1 pound beef
1 medium onion, halved and thinly sliced
2 cans (16 ounces each) kidney beans, raised and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
½ to ¾ cup water
1 to 2 tablespoon brown sugar
1 tablespoon chili powder
1 teaspoon prepared mustard
1 teaspoon salt
1/8 teaspoon pepper
a) In a large saucepan, cook beef and onion over medium heat until the meat is no longer pink, then drain.
b) Add the remaining ingredients.
c) You want to bring to a boil, and take saucepan away from heat.
d) Cover and let it simmer for 10 minutes.

2) Basic Chicken Soup
Chop 1 onion
1 celery stalk
2 carrots
1 tablespoon thyme; sauté in butter until tender
Season with salt and pepper
Add 6 cups chicken broth
a) Simmer 20 minutes.
Add 2 cups shredded cooked chicken
1/3 cup mixed chopped dill, parsley, and some lemon juice

3) Apple Crisp
3 pounds apples (9 medium apples)
¼ cup all purpose flour
¼ cup brown sugar
½ teaspoon cinnamon or more
1 ¼ cup all - purpose flour
¾ cup brown sugar
¾ cup white sugar
1½ stick of butter
½ cup chopped nuts any type of your choice
a) Preheat oven to 350 degrees.
b) Spray a 9"X 13" baking dish with vegetable spray.
c) Peel, core and slice apples and place in baking dish.
d) In a small bowl combine ½ cup flour, ¼ cup brown sugar and ½ teaspoon cinnamon.
e) Add this mix to apples and toss until coated.
f) With a blender or miser, combine the remaining flour, brown sugar, white sugar and cinnamon.
g) Using mixer, cut in the butter in little bits until crisp mixture is crumbly.
h) Add the nuts if you choose over the spread evenly over the apples.
i) Bake at 350 degrees for 45-60 minutes, or until it's crisp is nicely browned.
j) Let it cool a bit before serving.
k) You could serve it apple crisp a la mode with ice cream or whipped cream.

4) Bacon Dip
1 (16-oz.) container sour cream
1 (3-oz) jar Hormel Bacon Bits
2 cups shredded cheddar cheese
1 (8-oz) package cream cheese, softened
1 cup chopped green onions
a) Heat oven to 400 degrees.
b) In bowl, combine all ingredients.
c) Place in 1-quart baking dish.
d) Cover.
e) Heat 25 - 30 minutes or until hot.
f) Serve with assorted fresh vegetables, crackers, or chips.

5) Monkey Bread
1 package frozen dinner rolls- Rhodes brand
1 box regular butterscotch pudding- not instant
½ cup brown sugar
½ teaspoon cinnamon
1 stick butter
a) Grease bundt pan.
b) Line frozen dinner rolls in bundt pan.
c) Mix pudding brown sugar and cinnamon together.
d) Sprinkle that over the rolls.
e) Melt butter, and then put over rolls.
f) Let rise over night.
g) Bake 350 degrees for 20 minutes.
h) Let it cool 10 minutes.
i) Turn over onto plate.
